Orange Broiled Shark Steaks
|
1 lb. fresh or frozen shark steaks 1/2 cup orange juice 2 tbsp. catsup 2 tbsp. salad oil 1 tbsp. soy sauce 1 tbsp. lemon juice 1/4 tsp. pepper

Thaw fish if frozen. Cut shark meat into 1-inch-thick
steaks. In a bowl, combine orange juice, catsup, salad oil, soy sauce, lemon juice, and pepper. Pour mixture over steaks
in a shallow dish. cover and refrigerate for 2 hours. Drain fish, reserving marinade. Place steaks in a greased, shallow
baking dish and broil 4 inches from heat, until fish flakes easily when tested with a fork. Allow 5 minutes for each
1/2 inch of thickness. Baste occasionally with marinade. If steaks are more than 1 inch thick, turn fish over
when half dong. Brush again with marinade; sprinkle with sesame seeds. Serves 4. Preparation time: 20 min.
Allow 2 hours for marinating.

In Memory of Marcy May

Marcy May loved to rescue animals, according to Jim Solley who loved her for
35 years. Marcy passed away about a year ago. Jim has donated $25,000 to Safe Haven in memory of Marcy, and
there will be a Marcy May dog room at the sanctuary. Jim's very generous donation is designated for medical
care to save dogs. Marcy and Jim's
love story began in Philadelphia where they both grew up. They got to know each other in the 1970s on the CB radio
when Jim drove a truck. They decided to get together, and they fell in love at first sight. They started a new
life together in Cape May County, New Jersey. For about 20 years, they operated fishing party boats – Happy Days and
Happy Days 2. Jim worked for Cape May County and gave shark fishing seminars for years at sports show. Those were the
days that the movie "Jaws" came out so there was a great interest in sharks. Jim recalls how he and Marcy
visited Frank Mundus, the shark fisherman in Long Island who was the model for the character Quint in the movie. They
chartered Mundus' boat for a shark fishing trip, and Marcy caught a 103 pound blue shark. Afterwards they visited Mundus
at his home, which Jim recalls looked much like the character Quint's home in the movie. "Marcy was always willing to give anything a try," says Jim, as he points proudly to a
photo of her with the 270 pound sand tiger shark she caught. “She
left me with the best memories anyone could ask for.” For about 10 years, Jim and Marcy traveled to sports shows up and down the east coast for Cape May County and set up information
booths. Jim gave seminars on shark fishing, and Marcy demonstrated recipes with shark and other fish that can be caught
off in the ocean near Cape May County. Marcy worked for the Cape May County Office of Aging as the Meals Coordinator.
She was well known as an excellent cook. She wrote a cookbook called "Favorite Seafood Recipes from Marcy May."
The cover of the book has a drawing of their boat Happy Days. There are recipes for shark, flounder, blue claw crab,
soup/bisque, and spreads.
At a sports show that Jim and Marcy attended in Pennsylvania, there was a beagle club
that raffled off beagle pups every year. Marcy enjoyed talking with the beagle club members at the shows over the years.
She bought a number of raffle tickets, but never won. Then one year, one of the club members asked Marcy if she wanted
a beagle puppy who was going to be down by the breeder because of an overbite. Marcy rescued the puppy and named
her Snowflake. Anyone can see how much Marcy loved Snowflake in the photo above. When Jim
and Marcy retired, they moved to Seaford. Marcy enjoyed seeing the little toads everywhere and and named their
property “Frog Hollow.” On their dining room hutch, there is a little collection of frogs, as well as photos
of Marcy and other memorabilia from their 35 years together. Marcy loved collecting. Her beautiful collection
of oyster plates is exhibited on shelves along the walls of their home. Marcy loved Christmas so much that their clock
plays Jingle Bells, We Wish You a Merry Christmas and other carols.

Alex, an African Grey parrot, sings Christmas songs as he sits on top of
an elaborate cage in the dining room. Jim and Marcy decided to get an African Grey after reading "Alex & Me,"
by the New York Times Bestseller. Irene Pepperberg wrote of the astounding intelligence of Alex, her African Grey,
and of her deep bond with him. As a professor at Brandeis University, she did ground-breaking research on animal
intelligence:
"Scientifically speaking, the greatest
lesson Alex taught me, taught all of us, is that animal minds are a great deal more like human minds than the vast
majority of behavioral scientists believed - or more importantly were even remotely willing to concede. Now I am
not saying that animals are miniature humans with somewhat lower-octane mental powers, although when Alex strutted around
the lab and gave orders to all and sundry, he gave the appearance of being a feathered Napoleon. ...Alex taught us how
little we know about animal minds and how much more there is to discover." (p.214)
Jim and Marcy's Alex is now 20 years old and he could live to be
80. As part of our Home for Life program, Safe Haven has arranged with Jim that upon his passing, Alex will come to
live in the sanctuary's reception area and be our "greeter." Alex will enjoy seeing the people and
animals. He loves "the girls," the rescue dogs who now live with him in the same section of Jim's home:
two pit bulls, Sasha and Princess and Mac the beagle. Alex says clearly "Everything's OK, girls." And
everything is good for them because of the love they have been given by Marcy and Jim. Princess still carries the scars
from the beatings she suffered before Jim and Marcy rescued her. Sasha's owners wanted to use her in dog fights,
but she wouldn't fight so they allowed Jim and Marcy to rescue her. Mack the beagle had clearly been starving when
Jim and Marcy rescued him. Sweetie,
another rescue dog prefers a quieter environment and lives in a little apartment and is visited regularly by Jim during the
day. Mixie, the little stray cat, also lives in her own little place because she prefers not to be with dogs.
Jim keeps busy driving a school
bus with Sussex County elementary students and caring for his Sasha, Princess, Mack, Sweetie, Mixie, and Alex. He gets together
regularly with his sister and brother-in-law, Peg and Michael Ambrose who have a home just outside Bethany Beach. Nevertheless,
when Alex the African Grey says, "I miss Marcy," Jim quietly replies, "Yes, we miss Marcy."

2 1/2 tbsp. butter 4
tbsp. flour 1 cup milk 1 lb. crab meet 3 slices of bacon, fried & crumbled (reserve
fat)
|
1 egg beaten 1 tbsp. mayonaise 1 tbsp mustard 1 tsp. salt 1/4 tsp. pepper Bread crumbs

Melt margarine, add flour and stir until bubbly. Gradually
add milk and stir until thickened. To the white sauce, add crab meat, bacon, green pepper, egg, mayonnaise, mustard,
Worcestershire sauce, salt and pepper. Shape into cakes and coat with bread crumbs. Refrigerate crab cakes one
hour before cooking. When ready to cook, heat reserved bacon fat and fry crab cakes until golden brown. Serves
4 to 6. Preparation time 30 minutes - plus cooking.

Smoked Fish Christmas Log

2 cups flaked, smoked fish (whiting, salmon, herring) 8 oz. cream cheese, softened 1
tbsp. lemon juice 2 tbsp. grated onion

1 tsp. horseradish 1/4 tsp. salt 1/2 cup chopped pecans or walnuts 1 tbsp. chopped fresh parsley
|
Combine cheese, lemon juice, onion, horseradish and salt.
Stir in fish and mix thoroughly. Chill mixture for several hours. Combine pecans and parsley. Shape fish
mixture into log form and roll in nut mixture. Serve with crackers. Makes approximately 3 cups of spread. Preparation
time: 30 min. plus several hours for chilling.
